Let's face it. We eat energy bars. We stuff them in our pockets, our backpacks and our bikepacks. We consume them on the trail. They're easy and they're portable. But sometimes the energy bar offerings at the store can get a little old. You reach in your pack or pocket, pull out the same bar, begrudingly snarf it down and try to remember to find something different. And sure, the occasional pop tart or bag of cookies might seem like a nice change, but the list of ingredients in those options can sometimes be a bit less healthy. And, frankly, many of us prefer to eat energy bars that have natural ingredients that we can easily identify. So, why not make homemade energy bars? That's just what mountain biker, Anya Woo, does in the comfort of her own kitchen. We were lucky enough to catch her Instagram post about it, so we thought we'd ask her to share her recipe. Lucky for us, she offered it up so that we can all get creative in the kitchen. (And you'll notice, the ingredients are all easily identifiable.) Anya's Energy Bar Recipe INGREDIENTS
- 1 tablespoon honey or maple syrup
- 1 tablespoon unsweetened cocoa powder
- 1/4 teaspoon vanilla extract
- 1/3 cup pitted dates
- 1/4 teaspoon sea salt
- 1 cup any raw nut you like
- Process nuts to a fine meal in food processor.
- Add all other ingredients.
- Process again until it forms a dough.
- Roll the dough into balls.
- Store in the refrigerator or freezer. You're good to go.
Anya still feels she is "very much a beginner." Her husband got her hooked on mountain biking and "it has become a fun hobby for the two of us."On their two kids: Life has changed drastically now that they are parents of a 5 yr old and 1 yr old but it has been fun taking them out. "Our hope is that our two kids will also share in the love of biking." On the horizon: "My husband has been getting involved in bikepacking and our dream is to be able to travel as a family. Next summer, he is going to embark on a big bikepacking trip along the Colorado Trail." On time off the bike: "In the winter months, we enjoy snowboarding. In general, we pretty much love to stay active and play outside." On her husband: "He's a bit crazy and a bit of an adrenaline junky, but I suppose most are who enjoy mountain biking."
